There are two teams when fall rolls around: Team Pumpkin and Team Apple. And while I absolutely appreciate a good pumpkin coffee, I am firmly, enthusiastically, Team Apple.

Give me sweet apples, brown sugar, cinnamon, and nutmeg and I get all those cozy fall feelings that make me want to wrap myself in a flannel and walk through the crunchiest of leaves. Even better? Put all of those flavors into my coffee. Perfection. Absolute Perfection.

This homemade Apple Crisp Syrup is an easy fall coffee syrup made with apple juice or cider, brown sugar, cinnamon, nutmeg, and vanilla. It has that warm, baked-apple flavor that reminds me much more of an apple crisp coming out of the oven than an artificially flavored apple syrup. Admittedly, it took me far longer to perfect than some of my other syrups, largely due to the acidity of the apple juice/cider messing with my cold foam and milk. But we worked around that pesky curdling/cheesemaking issue (although… apple crisp cheesecake cold foam – am I on to something??) and this beautiful syrup is now one I keep around all fall.

And once you have a jar in your refrigerator, there are SO many ways to use it. Add it to hot or iced lattes, mix it into chai, use it to make my Apple Crisp Cold Foam, drizzle it into cold brew, or even pour a little over pancakes or oatmeal.

Basically, this is one of those recipes I make once and then spend the rest of the week finding excuses to put it on everything.

Apple Crisp Syrup Ingredients

You’ll need:

  • 1 cup apple juice or apple cider
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract

That’s it!

The combination of brown sugar, cinnamon, and nutmeg is what takes this from a basic apple simple syrup to something that tastes much more like apple crisp. The vanilla goes in at the end and rounds everything out with a warm, dessert flavor.

Apple Juice vs. Apple Cider

You can make this syrup with either apple juice or apple cider.

Apple juice: gives you a slightly lighter, sweeter, more consistent apple flavor. It’s also easy to find year-round, so it’s a great option if you suddenly decide you need an apple crisp latte in February. Not that I have ever done that…

Apple cider: tends to have a deeper, more complex apple flavor and is my favorite choice when it’s readily available in the fall. Depending on the cider you use, it may already contain some spices, which can make the finished syrup even more flavorful.

Just make sure you’re using regular non-alcoholic apple cider rather than apple cider vinegar or a sparkling apple cider. Those are some VERY different coffee experiences.

How to Make Apple Crisp Syrup

1. Combine the ingredients.

Add the apple juice or cider, brown sugar, cinnamon, and nutmeg to a small saucepan.

2. Heat the syrup.

Heat the mixture over medium heat, stirring occasionally, until the brown sugar has completely dissolved.

3. Let it simmer.

Bring the mixture to a gentle simmer and let it cook for about 5–7 minutes.

You aren’t trying to turn this into a super-thick caramel sauce. It should reduce and thicken slightly while still being thin enough to easily stir into a drink.

Keep in mind that the syrup will also thicken a little more as it cools.

4. Add the vanilla.

Remove the saucepan from the heat and stir in the vanilla extract.

Adding the vanilla after cooking helps preserve more of its flavor rather than cooking it away.

5. Cool.

Allow the apple crisp syrup to cool completely before transferring it to a jar or airtight container.

If you’re planning to use it for cold foam, definitely don’t skip the cooling step. You want your syrup completely chilled before adding it to cold milk or cream.

How to Use Apple Crisp Syrup in Coffee

For most drinks, I recommend starting with about 1–2 tablespoons of apple crisp syrup per drink and adjusting from there. If you like sweeter coffee—or you’re making a larger drink—you can always add more.

Can I Make the Syrup Stronger?

Absolutely. If you want a more concentrated apple flavor, let the syrup simmer a little longer so more of the liquid evaporates.

Just keep an eye on it. The longer you simmer it, the thicker and sweeter it will become, especially once it cools.

For coffee drinks and cold foam, I prefer keeping it syrupy and pourable rather than reducing it into a thick sauce that isn’t going to mix in as well.

Can I Adjust the Spices?

Yes! The cinnamon and nutmeg amounts are a great starting point, but homemade syrup is easy to customize.

For an even warmer fall flavor, you could add a tiny pinch of:

  • Ground cloves
  • Allspice
  • Ginger
  • Apple pie spice

Just remember that spices like cloves can become overpowering quickly. Start with a very small amount.

You can also add a cinnamon stick to the saucepan while the syrup simmers and remove it before storing. If I had cinnamon sticks on hand more often, I would probably prefer this as it doesn’t leave the same cinnamon residue that ground cinnamon does.

Why Is My Apple Syrup Cloudy?

Don’t worry if your homemade apple crisp syrup isn’t perfectly clear.

Ground cinnamon and nutmeg don’t completely dissolve, so some of the spices may remain suspended in the syrup or settle toward the bottom of your container.

That’s completely normal. Give the jar a little shake or stir before using it.

If you prefer a smoother syrup, you can strain it through a fine-mesh strainer after cooking.

Can You Make Apple Crisp Syrup Ahead of Time?

Yes, and I actually recommend it!

Having the syrup already chilled makes it incredibly easy to throw together a homemade fall coffee in the morning.

It’s especially helpful if you’re making Apple Crisp Cold Foam because the syrup needs to be completely cool before you combine it with your cold dairy.

Make the syrup the night before, pop it into the refrigerator, and you’re ready to go for the next morning.

How to Store Homemade Apple Crisp Syrup

Allow the syrup to cool completely and transfer it to an airtight jar or container.

Store it in the refrigerator for up to two weeks.

Give it a quick stir or shake before using, especially if some of the cinnamon or nutmeg has settled to the bottom.
