Apple Crisp Cold Foam: A Sweet Homemade Twist for Your Coffee

If you’ve checked out any of my other fall drink recipes, you know I’m firmly Team Apple. I love the cozy fall flavor and the spiced nutmeg/cinnamon notes paired with the sweet tangy apple… perfection. And I loveeee a good iced coffee with cold foam. So naturally, an apple cold foam was high on my list. An Apple Crisp Cold Foam is exactly what I needed, and it is delightful in every way.
However, this pesky apple crisp cold foam is, without a doubt, the recipe that I have taken the longest to perfect. I’m not opposed to using a syrup (Torani Syrup, looking at you as the best thing that happened to Toasted Marshmallow Cold Foam), but the apple syrups I came across just were giving way too much fake apple taste and not nearly enough homemade straight out of the oven baked apple taste. Then you add in that because of the higher acidity of apples, creating this recipe led me to many, many, curdled messes, and this recipe is something I feel is long overdue to my fall drink collection, but also FINALLY perfect. This version is made with a homemade apple crisp syrup that gives your coffee a sweet, spiced apple flavor, and a rich, creamy cold foam that’s perfectly fluffy and rich (and not curdled!), just pay attention to the directions on this one!

- 1 cup apple juice or cider
- 1/2 cup brown sugar
- 1 tsp cinnamon

- 1/2 cup half and half or milk (whole, oat, or your preferred milk – but the higher the fat content the better if you’re using dairy)
- 2–3 tbsp apple crisp syrup (adjust to taste)
- Optional: 1/2 tsp vanilla extract or 1/4 tsp cinnamon for extra flavor
How to Make the Apple Crisp Syrup
- In a small saucepan, combine apple juice, brown sugar, cinnamon, and nutmeg.
- Heat over medium heat, stirring occasionally, until the sugar is fully dissolved.
- Bring to a gentle simmer for 5–7 minutes, letting it thicken slightly.
- Remove from heat and stir in vanilla extract. Let cool before using.
You can store any leftover syrup in an airtight container in the fridge for up to two weeks. It’s amazing over pancakes, oatmeal, or even drizzled on ice cream!
A Note About Apple Juice and Milk
When combining apple juice or cider with milk to make your cold foam, you may notice that the mixture can sometimes curdle. This happens because the acidity in the apple juice can react with the proteins in milk. Essentially, your milk is trying its hardest to become cheese, but that is not what we want here. To prevent curdling and ensure a smooth, creamy foam:
- Use sugar: Adding sweetener to your apple juice to make an apple crisp syrup helps buffer the acidity and stabilize the mixture.
- Include fat: Whole milk, oat milk, or any milk with a bit of fat will create a protective layer around the proteins, helping to keep them from clumping.
- Mix gently: Froth or shake the mixture gently instead of pouring directly into highly acidic liquids.

How to Make the Apple Crisp Cold Foam
- Make your apple crisp syrup and allow to cool fully.
- In a small jar or frother, add your milk of choice. Remember that the higher the fat content, the better to keep it from curdling. I personally don’t recommend this with anything lower fat than a whole milk, but have the best luck with half and half.
- Slowly drizzle in your apple crisp syrup. If you’re using an electric frother (this is a bit of a splurge but you won’t regret it), I leave the lid off when I start and slowly add the syrup while it’s frothing, then replace the lid and let it finish doing it’s thing.
- Froth until light and foamy. If you don’t have a frother, shake the mixture vigorously in a jar with a tight lid for 30–60 seconds.
- Pour your iced coffee or latte into a glass.
- Gently spoon the apple crisp cold foam on top. Sprinkle with a little cinnamon or nutmeg if desired.
Tips for the Best Cold Foam
- Use cold milk straight from the fridge for the fluffiest foam.
- Half and Half, barista style oat or whole milk creates the most stable foam.
- Adjust the syrup to your taste—start with less, taste, then add more if you want it sweeter.
