Growing up (and honestly still today) the County Fair is the highlight of summer. There is something just peak summer living about the whole thing – the friends, the animals, the food.

ESPECIALLY the food.

I have consumed approximately one gazillion gallons of fresh squeezed lemonade from our county (and state) fairs. If you know, you know – the yellow and green plastic cup, the high likelihood of sucking up at least one seed, and the absolute perfection that is the sugary sweet lemonade.

There’s something special about a tall cup of lemonade from the state or county fair. It’s sweet, tangy, and icy cold—the perfect refreshment for a hot summer day that always hits just the right spot.

I personally had no issue spending my summer strawberry picking money on all the lemonades I could get as a kid, but it wasn’t until my own children discovered this nectar of the gods and started draining my bank account one lemonade at a time that I realized…I could absolutely make this at home.

I mean, I’d watched them make it at the fair enough times how could I not have picked up how to make one.  The good news? It’s incredibly simple.

With just lemons, sugar, water, and ice, you can make authentic fair-style lemonade right at home anytime you want. Although honestly, I still fully recommend grabbing one at the fair too because nothing quite compares to the whole experience.

If you love homemade summer drinks, you may also enjoy our homemade peach cold foam on iced coffee, strawberry mint simple syrup, or the nostalgic classic from my childhood, rhubarb slush.

Why Fair Lemonade Tastes Different

Unlike most homemade lemonade recipes that use a simple syrup, fair lemonade is made fresh to order. That means fresh squeezed lemons, sugar added directly to the cup, and everything is shaken together with ice and water. The result is a bold lemon flavor, a bit of pulp, and those signature sweet sugar crystals at the bottom.

It’s messy, imperfect, and really that’s part of what makes it so good.

Ingredients You’ll Need

  • 1 medium lemon (or 2 small ones)
  • 2–3 tablespoons granulated sugar (adjust to taste)
  • 1 cup cold water
  • 1 cup ice
  • Optional: extra lemon slices for garnish

For a fun flavor twist, you can also add homemade flavored syrups like our rhubarb simple syrup, lavender simple syrup, or rose simple syrup.

How to Make Fresh Squeezed Fair Lemonade

1. Roll and Slice the Lemon

Press and roll the lemon on the counter to help release more juice, then cut it in half.

2. Squeeze the Juice

Squeeze both halves into a sturdy glass or shaker. I have this juicer and it works so well – complete with the spout to pour the juice off once it’s squeezed. For the authentic fair look, toss in one of the squeezed halves.

3. Add Sugar

Pour in the sugar. Yes, it’s a generous amount—that’s part of the fair charm.

4. Shake It Up

Add ice and water. Seal your shaker (as you may have seen in my other posts, I’m a huge fan of a mason jar and these lids for anything that needs to be shaken) and shake vigorously for about 15 seconds. This helps dissolve the sugar and makes the lemonade extra cold.

5. Taste and Serve

Taste a sip—adjust sweetness or tartness as needed. Pour into a tall glass (or drink directly from the shaker!), add a straw, and enjoy right away.

Tips for the Best Homemade Fair Lemonade

  • Use fresh lemons only. Bottled lemon juice will not give the same flavor.
  • Roll lemons before juicing to help release more juice.
  • Shake instead of stirring for the most authentic fair flavor.
  • Adjust the sugar to your taste depending on how tart your lemons are.
  • Serve immediately for the freshest flavor.

Fun Summer Snacks to Serve With Lemonade

If you’re making a batch for friends or family, pair your fair-style fresh squeezed lemonade with some classic summer treats:

  • Kettle corn or caramel corn: A sweet-and-salty snack that feels straight out of the fairground.
  • Mini funnel cakes or fried dough bites: Dust them with powdered sugar for that authentic carnival vibe.
  • Fresh fruit skewers: Strawberries, pineapple, and watermelon are light and refreshing.
  • Soft pretzels: Salty, chewy, and perfect with a cold drink.
  • Simple Syrup: For a fun flavor twist, add our rhubarb or strawberry mint simple syrup!
