Creamy & Tangy Pasta Salad: A Crowd-Favorite Summer Side

Made with rotini noodles, fresh veggies, and a uniquely sweet-and-savory dressing, it’s a simple pasta salad with big unique flavor — and it’s perfect for feeding a crowd! It’s always brought to our family potlucks and functions and is simply and lovingly called “THAT Pasta Salad” because a salad this good needs no other introduction.
Whether you’re planning a summer BBQ or just want something cold and refreshing to keep in the fridge for quick lunches, this pasta salad is the perfect fit.
Ingredients
- 1 box rotini pasta (cooked and cooled)
- 1/4 cup vinegar
- 2 cups Miracle Whip
- 1 can sweetened condensed milk
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 4 carrots, peeled and shredded
Instructions

- Cook the Pasta
Boil the rotini noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool. - Make the Dressing
In a medium mixing bowl, whisk together the vinegar, Miracle Whip, and sweetened condensed milk until smooth and creamy. - Prep the Veggies
Chop the onion, green pepper, and carrots. This vegetable chopper makes this salad so quick to throw together! - Combine Everything
In a large bowl, combine the cooled rotini noodles with the chopped vegetables. Pour the dressing over the top and mix until everything is well coated. - Chill & Serve
Cover and refrigerate for at least 2–4 hours (overnight is even better!). This gives the flavors time to mingle and the dressing to thicken slightly.
Tips & Add-Ins
- Want more crunch? Add celery or chopped cucumbers.
- Make it a meal: Toss in some cubed ham or shredded chicken for extra protein. (But this salad is best with a burger or other protein on the side!)
- For a milder flavor: Use a sweet onion or soak your chopped onion in water for 10 minutes to reduce sharpness.
