Refrigerator Dilly Beans (No Canning Required)

These easy Refrigerator Dilly Beans are crisp, tangy, and packed with fresh dill, garlic, and a simple vinegar brine. No canning equipment is needed—just refrigerate and enjoy after a few days. Add optional red pepper flakes for a little heat or leave them out for a classic family favorite.

Ingredients

Beans

  • 1 pound fresh green beans washed and trimmed
  • 2 - 4 fresh dill sprigs or 2 teaspoons dill seed
  • 2 - 3 garlic cloves peeled

Brine

  • 2 cups white vinegar 5% acidity
  • 1 cup water
  • ½ teaspoon mustard seed
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon granulated sugar
  • ½ tablespoon salt

Instructions

  • Wash the green beans thoroughly and trim the stem ends. Cut them if necessary so they'll fit into your jars while leaving about ½ inch of headspace.
  • Place the dill sprigs and garlic cloves into the bottom of two pint jars (or one quart jar). Stand the green beans upright, packing them tightly.
  • In a small saucepan, combine the white vinegar, water, mustard seed, optional red pepper flakes, sugar, and salt.
  • Bring the brine to a gentle boil, stirring until the sugar and salt have dissolved completely.
  • Carefully pour the hot brine over the green beans until they are fully submerged, leaving about ½ inch of headspace.
  • Gently tap the jars on the counter to remove any trapped air bubbles and seal with clean lids.
  • Allow the jars to cool to room temperature before transferring them to the refrigerator.
  • Refrigerate for at least 3–5 days before enjoying. The flavor will continue to develop over the first week.

Notes

Store refrigerated at all times.
For the best texture, use freshly picked green beans.
Fresh dill gives the best flavor, but dill seed is a great substitute.
Leave out the red pepper flakes for a classic mild dilly bean.
The beans are best enjoyed within 2 months.
