Healthy Two-Ingredient Pretzel Bites (With Baking Soda Wash)

- 1 cup self-rising flour or 1 cup AP flour + 1½ tsp baking powder + ¼ tsp salt
- 1 cup plain Greek yogurt nonfat or whole
Baking Soda Wash:
- 2 cups water
- 2 tbsp baking soda
Optional Toppings:
- 1 egg for egg wash
- Coarse salt cinnamon sugar, or everything bagel seasoning
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Mix flour and Greek yogurt in a bowl. Knead for 2–3 minutes on a floured surface until smooth.
Roll dough into a long rope and cut into 1-inch bites.
Bring 2 cups of water to a boil; stir in baking soda. Reduce to a simmer.
Dip each pretzel bite in the baking soda bath for 20–30 seconds, then place on the baking sheet.
Brush with egg wash (if using) and sprinkle with desired toppings.
Bake for 15–18 minutes until golden brown.
Let cool slightly and serve warm.
