Cottage Cheese Pancakes

Easy and high protein, these delicious pancakes are a great meal any time of day!

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup flour
  • 2 eggs
  • 1/4 cup milk
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract (optional)
  • 1 tsp baking powder

Instructions

  • Blend cottage cheese in food processor or blender until smooth.
  • Add eggs, maple syrup, and vanilla into the food processor and blend until smooth.
  • In a separate bowl, whisk together flour, baking powder, and a pinch of salt.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Slowly add in the milk until the consistency is as you'd like it.
  • Heat skillet or griddle over medium heat. Pour 1/4 cup of batter onto skillet for each pancake. Cook until bubbles form and pop on surface, then flip and cook for another 1-2 minutes.
