Ingredients
1cupcottage cheese
1/2cupflour
2eggs
1/4cupmilk
1tbspmaple syrup
1tspvanilla extract(optional)
1tspbaking powder
Instructions
Blend cottage cheese in food processor or blender until smooth.
Add eggs, maple syrup, and vanilla into the food processor and blend until smooth.
In a separate bowl, whisk together flour, baking powder, and a pinch of salt.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Slowly add in the milk until the consistency is as you'd like it.
Heat skillet or griddle over medium heat. Pour 1/4 cup of batter onto skillet for each pancake. Cook until bubbles form and pop on surface, then flip and cook for another 1-2 minutes.
