It’s the time of year where, as much as I am an apple girl, my whole being also starts to get some FOMO at the idea of needing a bit of a pumpkin drink in my life. And so I will occasionally throw a Pumpkin Spice Latte or a Pumpkin Cream Cold Foam a bone, but they’re not QUITE it. You know what is really it?  I’ve finally figure it out. The secret of what makes pumpkin cold foam (and honestly probably most everything) even better? Marshmallow. This Pumpkin Marshmallow Cold Foam takes my classic homemade Pumpkin Cream Cold Foam and adds a little Marshmallow Syrup to give it a sweet, creamy marshmallow flavor that pairs SO well with pumpkin and warm pumpkin pie spices.

It’s basically everything I want in a fall coffee (that isn’t apple): creamy, fluffy, pumpkin-y, a little spiced, and the warm hug of some sweetness. And because we’re using marshmallow syrup, you don’t have to melt actual marshmallows or make a separate marshmallow mixture. I am truly obsessed with this Marshmallow Coffee Syrup, and have no shame in admitting it is the star (basically only) ingredient in my Toasted Marshmallow Cold Foam that I drink, on repeat, year round.

One of my favorite things about making cold foam at home is just how easy it is to change the flavor. Once you have a good creamy base, one small addition can turn it into something completely different.

For this recipe, that addition is marshmallow syrup.

Ingredients for Pumpkin Marshmallow Cold Foam

You’ll need:

  • ¼ cup heavy cream
  • 2 tablespoons milk (2% or whole milk for the best texture)
  • 1½ tablespoons pumpkin pie filling
  • 1 teaspoon powdered sugar, or more to taste
  • ¼ teaspoon vanilla extract
  • â…› teaspoon pumpkin pie spice
  • 1 tablespoon Torani Marshmallow Syrup

If you don’t have pumpkin pie spice, you can use a combination of cinnamon, nutmeg, and ginger instead.

Why Use Pumpkin Pie Filling?

I use pumpkin pie filling in my original Pumpkin Cream Cold Foam, and I kept it here because it gives the cold foam a rich pumpkin flavor while already bringing some of those cozy fall spices along with it.

Just make sure you’re grabbing pumpkin pie filling rather than plain pumpkin puree, since they aren’t quite the same thing.

Why Add Marshmallow Syrup?

Marshmallow syrup is the easiest way I’ve found to add marshmallow flavor to coffee drinks without actually having to work with marshmallows.

And if you’ve made some of my other homemade cold foam recipes, you know I am absolutely not opposed to letting a good flavored syrup do some of the work! It gives you consistent flavor, dissolves easily, and doesn’t interfere with the smooth texture we’re trying to create.

How to Make Pumpkin Marshmallow Cold Foam

Step 1: Combine the Pumpkin Cream Ingredients

Add the heavy cream, milk, pumpkin pie filling, powdered sugar, vanilla extract, pumpkin pie spice, and Torani Marshmallow Syrup to a small mixing bowl or mason jar.

Step 2: Mix Everything Together

Give the pumpkin cream mixture a good stir before you start frothing. If you’re using a Mason jar, you can also put the lid on (I’ve used these lids for years) and give it a quick shake to help everything come together.

Don’t worry about creating foam at this point—we’re just making sure the pumpkin, spices, and marshmallow syrup are evenly distributed throughout the cream.

Step 3: Froth the Pumpkin Marshmallow Cream

Use an electric (this is my go to frother) or handheld milk frother to froth the mixture until it becomes thick, creamy, and fluffy.

Keep an eye on the consistency as you froth. You want the cold foam thick enough to create a creamy layer on top of your coffee, but not so thick that it turns into whipped cream. It should still be soft and pourable enough to slowly work its way down into your drink.

Step 4: Add It to Your Coffee

Pour or spoon the Pumpkin Marshmallow Cold Foam over your favorite iced coffee, cold brew, or homemade iced latte.

For a little extra fall flavor (and a pretty finish!), sprinkle a small amount of pumpkin pie spice or cinnamon over the top.

  • Start cold. Heavy cream froths best when both the cream and your other ingredients are cold.
  • Don’t over-froth it. You’re looking for a thick, velvety foam—not whipped cream.
  • Adjust the sweetness after tasting. Between the powdered sugar, pumpkin pie filling, and marshmallow syrup, there are several sources of sweetness in this recipe. Start with the listed amounts and adjust from there.
  • Froth right before serving. You’ll get the prettiest layer of foam when you froth it immediately before adding it to your coffee.
  • Don’t skip the pumpkin pie spice. The marshmallow is delicious, but those warm spices are what really make this taste like a fall drink.

Can I Make Pumpkin Marshmallow Cold Foam Ahead of Time?

You can mix the pumpkin cream base ahead of time and keep it covered in the refrigerator. Then, when you’re ready to make your coffee, give it a good stir and froth the amount you need.

I prefer this over frothing the entire batch ahead of time because freshly frothed cold foam will give you the best fluffy texture.

Can I Make It Sweeter?

Absolutely, but this recipe is already very sweet, in my opinion! Make sure you taste it before adding any additional sweetener. Between the powdered sugar and the marshmallow syrup, we’re not lacking in sweet.

Start with the recipe as written, taste it, and then add a little more marshmallow syrup or powdered sugar if you prefer a sweeter cold foam.

Can I Use Pumpkin Puree Instead?

Pumpkin puree and pumpkin pie filling aren’t identical. Pumpkin pie filling is already sweetened and spiced, while pumpkin puree is simply pumpkin.

You can experiment with puree, but you’ll likely need to adjust the sugar and spices to compensate. For the most consistent results, I recommend using pumpkin pie filling as written in the recipe.

As much as I love experimenting with brand-new coffee flavors, some of my favorite recipes happen when I take something I already love and give it one simple little twist. Or, in this case, taking two things I love and combining them.
