Caramel Apple Cold Foam

If you love the cozy fall flavors of caramel apples and seasonal coffee shop drinks, you’re my type of people. And this Caramel Apple Cold Foam is going to be your new go to fall treat. Or at least be in the rotation with Pumpkin Cream Cold Foam, Apple Cider Chai Latte, and our Pumpkin White Hot Chocolate. Sweet caramel meets tangy apple cider in a creamy foam that takes any drink—coffee, cold brew, or cider—to the next level.
Similar to our Apple Crisp Cold Foam, but with a sweet caramely twist, this recipe is super simple to make at home, using either caramel ice cream topping or your own homemade caramel sauce. And even better than the Apple Crisp Cold Foam, it doesn’t require a homemade syrup to keep it from curdling! With just a few minutes and a frother (or blender), you’ll have a fall inspired cold foam that rivals anything on the Starbucks menu.
What is Cold Foam?
Cold foam is that frothy, slightly sweet milk topping that floats over your drink, gradually mixing in as you sip. Unlike whipped cream, it’s light and airy, giving you that coffee shop feel without the heavy mouthfeel and overwhelming sweetness of a whipped cream (not that that’s a bad thing, it’s just not what we’re looking for here!). For this recipe, we’re blending in apple cider and caramel for a delicious seasonal twist.
Ingredients
- ½ cup cold milk (whole milk, half and half, or oat milk work best for frothing)
- 1–2 tablespoons caramel sauce (store bought or homemade)
- 2 tablespoons apple cider (not apple juice)
- Optional: ½ teaspoon vanilla extract
- Extra caramel for drizzling on top
Instructions
- Mix caramel and cider first. To prevent curdling, whisk the caramel sauce and apple cider together in a small cup or bowl until smooth. The caramel helps buffer the acidity of the cider so it blends better into the milk (see the below section on troubleshooting for what happens if you don’t blend first!).
- Add to cold milk. Slowly pour the caramel/cider mixture into your cold milk, along with vanilla if using. If you’re using an electric frother (it’s my favorite way to make most cold foams!) or handheld frother I recommend starting the cold frothing with just the milk and slowly drizzling in the caramel apple mixture while it’s running.
- Froth it up. Use a handheld frother, electric frother or jar with tight fitting lid to whip until the mixture is thick and foamy (about 30–60 seconds).
- Serve. Spoon the caramel apple cold foam over iced coffee, cold brew, or a chilled glass of apple cider. Finish with a caramel drizzle for extra sweetness.

Troubleshooting: Why Does Milk Curdle with Cider?
Apple cider is naturally acidic, and when mixed directly with milk, that acidity can cause the proteins in milk to curdle. It’s similar to how cheese is made (side note, this is one of my favorite topics!), but we’re not trying to make cheese here. This doesn’t make the drink unsafe, but it does create an unpleasant texture.
How to prevent it:
- Always mix the caramel and cider together first. The sugar in the caramel helps act as a buffer to neutralize some of the acidity before it touches the milk.
- Use very cold milk or cream, since cold temperatures reduce the chance of curdling.
- The higher the fat content the better – the fats in the milk will help keep the proteins from bunching together right away.
- If you’re worried, try oat milk—it froths beautifully and doesn’t curdle as easily with acidic ingredients.

- Homemade Caramel Sauce: A simple butter-sugar-cream caramel will make this foam taste extra rich – and make you feel extra fancy for making it yourself.
- Make it Dairy-Free: Oat milk and almond milk both froth well and pair perfectly with cider.
- Extra Fancy: Add a caramel drizzle, sprinkle of cinnamon sugar, or even a little crushed graham cracker on top for texture.
