This pistachio simple syrup is creamy, nutty, and perfectly sweet. It includes one of my favorite things – a shortcut that makes it look like you spent a lot more time on it than you did. Instead of steeping whole nuts and going through that whole rigmarole, it’s made with a simple store bought (or homemade I guess if you’re not looking for a shortcut??) pistachio butter. Using pistachio nut butter gives you bold pistachio flavor fast, with a smooth texture that blends beautifully into cold foam, lattes, iced coffee, matcha, and even desserts.

To be honest, I have always been happy with the Torani Pistachio Syrup and if I wouldn’t have accidentally purchased pistachio nut butter instead of pistachio cream for a Christmas cookie recipe, I probably would have continued being content with that syrup indefinitely. However, because I had an excess of pistachio butter and a bit of an obsession with making my own coffee syrups after discovering how much better homemade Sugar Cookie Syrup is, I decided to do some experimenting. And holy cow, is this syrup good. So good that I’m not sure I can go back to my Torani syrup ever again. So good that it might be one of my new favorite coffee flavors – year round. So basically, this is me telling you that if you try just one simple syrup recipe, it should be this one. You will not regret it.

Why Use Pistachio Nut Butter?

Using pistachio nut butter keeps this recipe:

  • Quick & consistent (no straining chopped nuts)
  • Flavor forward with real, simple pistachio taste
  • Smooth and creamy, ideal for drinks
  • Easy to customize for sweetness and thickness

This method works especially well for cold foam, where you want rich pistachio flavor without grit.

How to Make Pistachio Simple Syrup

Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons pistachio nut butter (smooth, unsweetened is best)
  • ½ teaspoon vanilla extract (optional, but recommended)
  • Pinch of salt (optional, enhances flavor)

Instructions

1. Heat the Sugar and Water

In a small saucepan over medium heat, combine the sugar and water. Stir occasionally until the sugar is fully dissolved and the mixture is clear. Do not let it boil hard—gentle heat is perfect.

2. Whisk in Pistachio Nut Butter

Reduce heat to low and whisk in the pistachio nut butter until fully incorporated. The syrup will turn slightly creamy and opaque. It will take a bit of whisking to get the nut butter to fully incorporate.

3. Simmer Gently

Let the mixture simmer on low for 3–5 minutes, stirring often to prevent sticking. This helps the pistachio flavor fully bloom.

4. Finish and Cool

Remove from heat. Stir in vanilla extract and a pinch of salt if using. Let cool completely.

5. Store

Pour into a glass jar or bottle. Refrigerate for up to 2 weeks. Shake before using, as natural separation may occur.
